While my parents have been out of town, I have been feeding their cats. They told me to take any ripe tomatoes I could find, and I brought home several. I meant to make the tomato pie again, but haven’t gotten the chance — and I’ll be busy the next 10 nights with the horse show. So tonight, I made salsa — the first time I think I’ve ever done it with home-grown tomatoes.
Because I had so many tomatoes, I didn’t use any tomatilloes. Even with a little extra lime juice, it’s not quite as tart as my usual salsa. And I didn’t think to pick up any fresh cilantro when I was getting the other veggies tonight, so I used dry cilantro — and cilantro is one of those herbs where the dry version and the fresh version are really, really different.
Even so, the salsa tastes OK, and will probably taste better tomorrow morning after it’s had a chance to meld overnight. I’ll take it to work for my co-workers to enjoy.
