Chipotle brown rice

My post about brown rice caused some controversy, bringing out people who think brown rice is yummy and those who, well, don’t. Anyway, here’s an approximation of what I’ve made the last time or two I’ve cooked brown rice:

1 1/2 cups brown rice
2 1/2 cups chicken broth or stock
1 chipotle pepper packed in adobo sauce, finely minced (use 2 if you prefer!)
2-3 cloves of garlic, finely minced or put through a garlic press
1 t. dried cilantro
1 t. dried oregano
2 t. salt, seasoning salt, cajun seasoning or Tiger seasoning (may be adjusted depending on saltiness of chicken broth)
1 T. olive oil

Preheat the oven to 375 degrees F.

Combine all ingredients in a round casserole dish with a heavy lid. Bake, covered, for 1 hour. Remove cover and fluff the rice with a fork.

    I love brown rice but I don’t always have time to cook it so I end up using the boil-in-bag brown rice. I have a big jar of basmati brown rice that I need to start using up so I think I’ll try your recipe here…it sounds great!

    That sounds doable…What’s Tiger seasoning? I do have some Tony Chachere’s…might try that.
    Hey…I didn’t know we were getting the cookbook for free…I thought it would be available to buy at the office. I was like a kid at Christmas when I opened the paper and that cookbook fell out!! It was a good day!!!!

    Tiger Seasoning is like a flavor-enhancing dry seasoning, not exactly a strongly flavored as a seasoned salt (warning: it contains MSG). You get it where all the other salt and powdered seasoning is in the grocery store. I bought it out of curiosity a few weeks back, and it comes in a relatively large jar so I’m trying to use it up.
